Thenkay (Cocunut) Burfi - My first Sweet dish for my wife..



Three day back , one of my  office peer (Sarayu) got this wonderful sweet to office.. It has been long time i tasted this sweet.. I asked her recipe and had a plan of giving surprise to my wife by making this sweet.. Atlast the result of this sweet making came very well and my wife got stunned after tasting it. Yahoooooooooo....  Whats Next ???



Preparation Method:


Freshly grated coconut – 2 bowls( Soup bowl), Sugar – 1 cup, Elaichi – ¼ spoon, Ghee – 1 to 2 spoons, Milk – 4 to 5 spoons.
  • Mix the coconut and sugar nicely with hands and keep aside for 15 mins.
  • Grease a flat tray with ghee.
  • Heat a heavy bottom wide pan and pour the coconut-sugar mixture in to the pan.
  • Keep stirring the mixture for 10 mins and add milk and elaichi.
  • After 5 mins add ghee and mix well.
  • When the mixture starts leaving the sides of the pan remove it from flame.
  • Immediately pour the mixture on to the greased plate and tap the tray on the floor gently in order to spread the mixture evenly on the tray.
  • Allow it to cool for 5 mins and cut it in desired shape when it is still warm.
  • Serve it when it is completely cooled

I tend to stuff more in the luggage back while going to hometown, traveling for a casual trip or business trip to other country. At the end I end up in wasting too much of energy in carrying the luggage where most of the stuffs will not used in the trip. A Day in Nemmara Kerala: Temple Festival Filled with Lights and sounds...

I almost gone tired after traveling to different places every weekend but my love on travel hasn’t reduced. This time, decided to travel to Nemmara, a small Village near by Palakaad district with cheriath , one of my Colleague to celebrate Bhagavathi Amman temple festival.
